Forget everything you know about commercial drinks. Apong is a traditional rice-based brew, meticulously crafted by the Mising people of Assam and Arunachal Pradesh. It's the lifeblood of their social, religious, and cultural existence, gracing every significant occasion – from the joyous unions of Midang (marriages) and vibrant harvest festivals like Ali a:ye ligang, to solemn Dodgang (funerals) and heartwarming community gatherings. To taste Apong is to taste the very essence of Mising life.

The Distinctive Flavors: Nogin and Po:ro Apong

The Mising community honors its traditions by brewing two primary varieties of Apong, each with its own unique character and story:

  • Nogin Apong: This is the everyday elixir, a testament to simple yet profound craftsmanship. It's made by fermenting cooked rice with E’pob, a locally prepared starter cake. What makes E'pob so special? It's a blend of rice flour infused with indigenous medicinal and aromatic plants, a secret passed down through generations that gives Nogin its distinctive, refreshing notes.
  • Po:ro Apong (Sai-mod): Reserved for moments of deeper significance, Po:ro Apong is the ceremonial brew. Its rich flavor and unique color come from a fascinating ingredient: ash from partially burned paddy husk and straw, mixed with cooked rice and, of course, the indispensable E’pob. This elaborate, time-honored process yields a brew that embodies the solemnity and joy of special occasions.
